The Recipe Instructions
 

 

Ingredients

1 cup yellow cornmeal
1 cup unbleached all-purpose flour
2 tsp baking powder
1 tsp baking soda
2 eggs, beaten
3/4 cup low-fat buttermilk
1/4 cup honey
2 tbsp canola oil


Directions

Preheat the oven to 375 degrees. In a large bowl, combine the cornmeal,
flour, baking powder and soda.

Combine the remaining ingredients and add slowly to the dry ingredients.
Mix until blended. Pour into non-stick muffin cups, making them about
two-thirds full.

Bake until golden about 20 to 25 minutes. Remove the muffins from the pan
and cool completely.

This recipe yields 12 muffins. Serving size: 1 muffin.

Exchanges Per Serving: 1 1/2 Carbohydrates, 1/2 Monounsaturated Fat.

Foods containing allyl sulfides

The alliaceae range of vegetables is rich in allyl sulfides, a chemical which experts believe could be linked to a reduced risk of stomach and colon cancer.

The Atkins’ Diet

Unlike other diets, on the atkins diet the foods you are encouraged to eat continues to be nutrient-rich unprocessed foods such as meat, fish and poultry. You also can eat shellfish, regular full fat cheese, butter & olive oil.
